2 lbs Pinto Beans
12 c. water
2 garlic cloves, chopped
1 onion, chopped
1 1/2 tsp cumin seed
1 tsp salt
1/4 tsp black pepper
1 1/2 lbs ham hocks, Note 1

Directions:
Note 1: Use about one to two pounds of meaty ham hocks.

Pick over beans, wash thoroughly and drain. Place in a very large pot. Cover with the water; add garlic, cumin, onion, salt, pepper and ham hocks. Cover tightly, bring to a boil and reduce heat, simmer for three hours or until beans are tender. Check and stir a few times, add water as necessary to keep beans from drying out. Skim off fat before serving. Season to taste.

This may be eaten as a soup with corn bread or re fried with cheese.

To re-fry: melt bacon grease in pan, add beans with some of the juice and mash. Fry until of desired consistency and then add grated long horn or Monterrey jack cheese.
