5 pounds potatoes
1/2 celery stalk, finely chopped
1 medium onion, finely chopped
8 hard boiled eggs
1 can black olives, pitted
2 tbsp lemon juice
1 cup mayonnaise
2 tbsp mustard

Directions:
Directions:
Boil potatoes until tender. run cold water over potatoes when done to prevent them from cooking more. Drain. Peel if desired and dice into small pieces. Pour lemon juice (or two tablespoons vinegar) over the potatoes. then add the rest of the ingredients and mix well. Refrigerate until cold and ready to serve.
