1 can crushed pineapple, 15 1/2 oz
1/2 cup brown sugar, packed
2 tbsp cornstarch
1 egg, beaten
1/2 tsp cinnamon
1 package active dry yeast
1/2 cup warm water
1 tbsp granulated sugar
2 1/2 cups buttermilk baking mix
1 cup natural cereal with raisins & dates
maraschino cherries, optional
nuts, optional

Directions:

Drain pineapple, save liquid for icing.

Combine pineapple, brown sugar, corn starch, egg and cinnamon. This makes the filling. Cook over low heat, stirring constantly until thickened. Cool.

Sprinkle yeast over warm water and let stand five minutes.

Turn out on board covered with baking mix and kneed smooth about twenty times, let rest five to ten minutes. Roll out to a rectangle 9 X 16 inch. Spread with cooled pineapple filling and sprinkle with cereal.

Roll up and shape into ring. Place in greased pan. Clip two-thirds way thru roll at one inch intervals. Turn each cut on it's side. Let raise one hour in warm place.

Bake at 375 degrees for twenty to twenty-five minutes.

Frosting: Mix one cup powdered sugar, drained syrup, one-half tsp vanilla. Dribble over top.
