Each Batch
4 C potatoes, boiled and riced
2 C flour, plus more for rolling
1 t salt
1/4 C whipping cream
1/4 lb butter, melted

Directions:
Directions:
12 pounds of potatoes makes 7-8 batches. Each batch makes about 7 lefse. Adjust quantities to your needs.
Cook and rice the potatoes the day before and cool. Do not add any other ingredients to the potatoes until you are ready to roll out and cook. Store potatoes in the refrigerator. Mix the ingredients together, mixture will appear dry, work the dough with your hands and it will soften. Make tennis ball sized balls, roll out with lefse roller and cook on lefse griddle until lightly browned. Store cooked lefse in plastic bags. Can be frozen after it is made.
