For the dressing

1 teaspoon of Dijon mustard
Salt, pepper and dry Italian seasoning (like oregano, basil and thyme)
1 clove of Garlic minced fine
1 tablespoon of Shallot minced fine
2 tablespoons of Balsamic Vinegar
1 tablespoon of fresh squeeze Lemon Juice
A pinch of sugar

Mix it well

Then, while whisking drizzle in Extra Virgin Olive Oil until the whole mixture double in volume.

Baby Spinach
Toasted Pecan
Gorgonzola Cheese and
Sliced Red Pear (or Fuji Apple)

That is my Spinach Salad.
