Pastry for 9 inch pie dish. Just as easy to buy frozen wholewheat crust from TJoes.

1 1/2 cups (6 oz) shredded swiss cheese (cheddar is fine too)
1/2 diced cooked ham
4 eggs beaten
2 tomatoes thinly sliced
2 Cups Half and Half
1/2 tsp dry mustard
1/4 tsp salt
parsley

I sometimes add chopped asparagus, onions, green chile. You can really add whatever you feel like but the above ingredients are for a true Quiche Lorraine

Line 9 inch pie plate with pastry.
Layer bottom chopped ham (and anything else you want to add). Layer with cheese. Combine eggs with 1/2 and 1/2, dry mustard and salt. Pour into pastry shell. Top with sliced tomatoes and parsley.

Bake at 325F for 55-60 minutes until set.
Let stand for 10 minutes before serving.
