¼ cup olive oil1 clove garlic, minced1 egg (I use a pasterueurized egg)2 Tablespoons lemon juice1-2 Tablespoons red wine vinegar12/2 tsp. Worcestershire sauce4-6 anchovy fillets, cut in bits (I mix these into the dressing and try to make the dressing ahead of time so that the ingredients can blend---and then I pour the dressing through a sieve so that the anchovy fillets are only used to flavor the dressing and no one actually has to bite into one when they eat their salad.)¼ cup grated Parmesan cheesefreshly ground peppersalt, to taste

1. Immerse egg in boiling water exactly one minute.
2. Combine olive oil and garlic. Add in egg, lemon juice, vinegar, Worcestershire sauce, anchovies, pepper and salt.
3. Tear Romaine lettuce into a bowl---pour dressing over the lettuce, add Parmesan and toss together---then add croutons on top of salad.
