1 cup whole wheat flour
1 cup white flour
1 teaspoon salt
2 teaspoons baking powder
1 tablespoon brown sugar
1 teaspoon cinnamon
2 cups milk
2 eggs, well beaten
2 tablespoons oil
2 cups finely chopped red rhubarb
1/2 cups white sugar to sweetened the rhubarb

Directions:
Directions:
Combine the first 5 dry ingredients together and stir. In a separate bowl beat the eggs, add the milk and oil. Stir into the dry ingredients. Sweeten the rhubarb with 1/2 cup white sugar then combine into the dough. Fry on a lightly greased griddle until golden brown on both sides. Serve hot with butter and pancake syrup.

This can also be made into Apple-Walnut Pancakes by using 1 cup diced apples and 1/2 cup chopped walnuts instead of the sweetened rhubarb.
