10 Zucchini Flowers
1 Egg
dash of salt
Flour (approx. 1 cup)
Seltzer Water (1/2 to 3/4 cup)
Mozzarella Cheese (optional)

Oil to fry them in (Canola/Vegetable Blend)

Directions:
Wash zucchini flowers and remove pistil and little green projections on outside of flower. Dry on paper towel.

Mix egg, flour, salt and sparkling water making a batter the consistency of a thin pancake batter.

Fill the inside with shredded mozzarella if you choose. Then roll it in the batter, twisting the tip of the flower together as you roll.

Fry in oil at about 350º until lightly browned. Place on paper towels to absorb oil. Sprinkle with salt if you wish.
