Just a recipe I make and always enjoy. I'm sure most Italians use something similar. Maybe with white beans.
2 T. of chopped garlic I use that much for 1 head of escarole
2 heads of escarole torn into pieces (cut)
2 cans dark red kidney beans drained and rinsed.
chicken broth
red pepper flakes
linguini
Olive oil

Directions:
Directions:
Saute chopped garlic in olive oil in a skillet
Add the chopped escarole with it until limp.
Add the dark red kidney beans and red pepper flakes
Add some chicken or vegetable broth
Cook linguine in salted water
Add the linguine to the mix in the skillet
Top with Locatelli cheese
salt and pepper if needed.
