8-10 medium Russet baking potatoes, about 3 1/2 lbs.
8 oz. pkg cream cheese, softened or Boursin cheese
1/2 C sour cream
salt and pepper to taste
2 T melted butter
Paprika

Directions:
Directions:
Boil peeled. potatoes in salted water until tender, 25-30 minutes. Drain. Using an electric mixer, beat cream cheese and sour cream until blended. Gradually add drained warm potatoes, beating until smooth and soft. Season with salt and pepper. Spoon whipped potatoes into buttered 2 quart baking dish. Brush surface with melted butter. If made only a few hours before serving, refrigeration isn unnecessary. Leave in a cool pot at room temperature. Bake at 350 degrees form about 30 minutes. Sprinkle lightly with paprika before serving.
