10 - 12 medium size red potatoes or any waxy potato -- no russets (about 3 pounds)
½ cup white sugar
1 pound bacon -- bacon ends work the best -- cooked until crisp
reserved bacon drippings to equal ½ cup (add olive oil to make up any difference)
½ tsp. salt
½ tsp. black pepper
1 to 2 tsp. celery seed
⅓ cup cider vinegar
1 large white onion - chopped
1 egg yolk
3 TBS flour
1 cup boiling water
2 boiled eggs - sliced

Directions:
Directions:
Boil potatoes until cooked. Let cool. Peel & slice into large serving bowl.
Add salt, pepper, sugar, celery seed & onion to small bowl. Add bacon drippings and vinegar. Whisk to blend. Pour over potatoes. Stir gently to combine.
In a sauce pan, beat egg yolk. Add flour and beat smooth. Add boiling water and mix until smooth. Cook over medium heat until slightly thickened. Pour over potatoes and mix well. Taste and add more seasonings if needed. Cover and let set overnight.

***Do not refrigerate*** Serve at room temp. Before serving, stir well and sprinkle top of salad with bacon crumbles and sliced eggs.
