2 teaspoons butter
2 teaspoons olive oil
½ cup finely chopped green onions
½ cup fresh squeezed orange juice
½ cup dry white wine
2 quarts water, salted
1 ½ pound green beans
1 Tablespoon grated orange peel

Directions:
Directions:
Heat butter and olive oil in a small saucepan over low heat. Add onions and saute until soft, about 3-4 minutes. Add orange juice and wine. Increase heat to high and boil until thick and syrup like, about 4 minutes, stirring often. Set aside.

Bring water to boil. Add beans and cook until al dente. Serve beans with sauce and grated orange peel.

This sauce can be made with lemon juice or use asparagus.
