1/2 CUP SHORTENING
3 CUPS SUGAR
6 EGGS
3 CUPS FLOUR
1/2 TSP BAKING POWDER
1/8 TSP SALT
1 CUP MILK
1 TSP VANILLA
1 TSP LEMON EXTRACT

LEMON CURD:
2/3 CUP SUGAR
1 1/2 TBS BUTTER, MELTED
2 TSP LEMON ZEST
2 TBS LEMON JUICE
1 EGG

Directions:
BEAT BUTTER AND SHORTENING UNTIL CREAMY, GRADUALLY ADD SUGAR. BEAT TILL LIGHT AND FLUFFY. ADD EGGS, ONE AT A TIME. SIFT DRY INGREDIENTS AND ADD, ALTERNATING WITH MILK. BEGIN AND END WITH FLOUR MIXTURE. STIR IN VANILLA AND LEMON. POUR INTO GREASED AND FLOURED 12 CUP TUBE PAN. BAKE 325 - 1 HOUR 30 MINUTES. COOL 10-15 MINUTES IN PAN. REMOVE FROM PAN AND BRUSH WITH LEMON CURD.
LEMON CURD: STIR TOGETHER FIRST 4 INGREDIENTS IN SAUCEPAN. ADD EGG, STIRRING TILL BLENDED. COOK MIXTURE OVER LOW HEAR 10-12 MINUTES, TILL SLIGHTLY THICK . USE IMMEDIATELY
