4-5 Medium Chicken Breasts (Boneless and Skinless)
1/2 Cup Flour
1Tsp. Salt
1/2 Tsp. Black Pepper
1/2 Tsp. Dried Oregano
1/4 Cup Oil
1 Stick Butter
2 Cups Fresh Mushrooms (Sliced)
1 Cup Dry Marsala Wine (Dry Wine)

Directions:

Wash and dry chicken breasts. Place between two pieces of plastic wrap and pound to flatten. Combine flour, salt, pepper and oregano in a bowl. Dredge chicken pieces in the flour mixture and coat well, shaking off any excess flour. Heat oil and butter in a large skillet. Place chicken breasts in the skillet and cook until lightly browned on both sides. Add mushrooms and cook for about 5 minutes. Add the wine, cover skillet and simmer for about 5 minutes.

I use any "dry" wine that I have for this dish. It is wonderful served with garlic mashed potatoes.
