-4 skinless chicken breast halves (or thin chicken breasts)
-2 bunches Andy Boy Broccoli Rabe, trimmed
-4 slices prosciutto (I didn't use)
-6 sun-dried tomato halves, julienned
-1 small shallot, minced
-2 garlic cloves, minced
-1/2 C olive oil (I used way less)
-2 C homemade or jarred tomato sauce (I made a homemade tomato sauce, see ingredients below)
-2 T capers finely chopped
-1/3 C sliced Italian olives (I didn't use)
-2 T finely chopped Italian parsley
-Salt and freshly ground parsley

Homemade tomato sauce:

-1 pint cherry tomatoes
-3 cloves garlilc, minced
-1 shallot, thinly diced
-1/4 cup white wine
-smoked paprika
-cinnamon
-red pepper flakes
-salt
-pepper

Directions:
-Preheat oven to 350 degrees.

-Heat up 2 T olive oil in a large pan over medium heat. Sauté Andy Boy Broccoli Rabe, along with shallots, garlic and sun-dried tomatoes. Season with salt and pepper.

-Pound chicken breast (skin side down) until flat (or you can use thin chicken breasts). Top with prosciutto (if you are using it) and add 1/8 of the broccoli rabe mixture. Roll up and tie. Bake for 25 minutes or until done.

-Meanwhile, make the homemade sauce. Heat a few tablespoons of olive oil in a large saute pan over medium heat. Saute the tomatoes in a pan with oil until slightly browned. Remove from pan. Cook the garlic and shallots until soft, about 2 minutes. Add the grilled tomatoes, wine, paprika, cinnamon, red pepper flakes and sprinkle with salt and pepper. Bring to a simmer. Crush the tomatoes with a spoon. Cook until the sauce thickens.

-Warm the tomato sauce and add the capers and olives (if using). I added the parsley to this mixture. To serve, Spoon 4 T sauce onto plate. Make a bed of broccoli rabe mixture and set sliced chicken breast on top.

-Sprinkle with chopped parsley.

I paired this dish with spaghetti squash and carrots. It was time consuming but very tasty.
