1-2 lbs beef shanks, short ribs and veal bones
1 16-oz can tomatoes
2 carrots, sliced
3 stalks celery with tops, sliced
2 medium onions, diced
2 medium potatoes, diced
3 cups water
1 teas salt
4 peppercorns
3 beef bouillon cubes

For last two hours, add:
10-oz pkg frozen mixed vegetables
10-oz pkg frozen peas

For finishing: lemon zest and lemon juice

Brown meat if desired. Put all but mixed vegetables and peas in crock pot. Stir well. Cover and cook on low for 12-24 hrs (or on high for 4-6 hrs). Two hours before end, add the mixed vegetables and peas. Finish with fresh lemon juice and zest.
