1 lb mild Italian sausage, casing removed.
8 oz cream cheese
1 (10-oz) can Ro-Tel diced tomatoes and green chilies, drained.
1 T kosher salt
2 (14 by 17 inch) sheets frozen puff pastry dough, thawed.

Directions:
1. Preheat oven to 350 degrees. In a medium skillet or medium-high heat, saute sausage, breaking up with a spoon or spatula, until cooked through, 8 - 10 minutes. Drain fat and transfer sausage to a medium bowl. Stir in cream cheese and tomatoes. Add salt, stirring to incorporate.
2. Gently roll out pastry dough onto a lightly floured work surface. Cut each sheet of dough in half lengthwise.
3. Spread 1/4 sausage mixture along bottom half lengthwise of on pastry dough piece. Tightly roll dough from bottom to form a log. Cut into 10 (2-inch-wide) nuggets. Repeat with remaining pastry and filling.
4. Transfer sausage nuggets to two parchment-paper-lined baking sheets. (You may need to bake in two batches.) Bake until golden brown, about 30 minutes.
