Turkey carcus and any leftover stuffing
2 quarts water
1 teas tabasco
2 teas salt
1 bouillon cube
3 peppercorns
1 carrot, pared and diced
1 medium onion, coarsely chopped
1 celery stalk (with leaves), sliced
3 sprigs parsley
1 bay leaf

Break up carcus and put in a deep kettle. Add remaining ingredients. Bring to a boil and then reduce heat to a simmer. Simmer about 2 hours. Strain or pick out bones. Cook noodles in the broth and serve.
