1 1/2 c. stone ground cornmeal
1/2 c. flour
2 tsp. sugar
4 tsp. baking powder
1/2 tsp salt
1 c. milk
1/4 c. oil (or melted bacon grease)
2 eggs

Directions:
Directions:
Preheat oven to 400o. Mix all ingredients. If using muffin pans, place about 1/4 to 1/8 tsp. bacon grease in the bottom of each muffin container and sprinkle
a small amount of cornmeal on top of the bacon grease. When oven is hot, place pan in oven and allow to get very hot - (be sure to watch as you don't want
the cornmeal to burn). Remove from oven - carefully - and fill each muffin opening with the cornmeal mixture. Bake for 15 to 18 minutes, then turn the oven broiler on and just brown the tops of the cornbread muffins..........So, so good with black eyed peas, stew, soup or whatever.

Cornbread was one of my Mother's favorite, FAVORITE foods, having grown up in the country (Oklahoma). If there was any leftover, Mother would usually the next day, crumble it in milk for her lunch.
