1 lb. Ziti
12 ounces bacon or pancetta

Bechamel Sauce:
1 stick unsalted butter
1/2 cup flour
3 1/2 cups whole milk
Zest of 2 lemons
3/4 cup Parmesan
1 tsp. salt
1/4 tsp pepper

1-2 fresh thyme, minced
1/2 cup fresh lemon juice
2 cups mozzarella cheese

Topping:
2/3 cups bread crumbs
1/3 cup Parmesan
Olive oil for drizzling

Directions:
Directions:
Bring a large pot of salted water to a boil for ziti.

Chop bacon or pancetta and fry till crispy. Drain, set aside.

Béchamel Sauce:
Melt butter, add flour and whisk till smooth, cook about two minutes till raw flour
taste is gone.
Slowly add milk, then lemon zest.
Cook for approximately 10 minutes. Remove from the heat and stir in the Parmesan, salt and pepper.
In a large bowl combine, pasta, sauce, thyme, pancetta and mozzarella, mix well, finish with fresh lemon juice.

Pour into a prepared 9 x 13 pan.

Mix remaining Parmesan and bread crumbs and cover top of pasta.
Drizzle with good olive oil.

Bake for 25 minutes at 350.
