3 eggs
3/4 cup flour for each egg (total of 2 1/4 cups) --may need more or less depending on the size of the eggs

Crack 3 eggs into food processor and buzz it several times to slightly beat.
Add flour all at once, and process until a ball forms. Remove from processor and knead a little on a floured board.
Keep under an overturned bowl so it doesn't dry out.

Put through pasta machine, folding several times at biggest setting to let the machine do the kneading. Make into long strips, ending at the 2nd to the last setting on the pasta machine. Let dry on a sheet on the table until firm.

Cut to desired width of noodle. Let dry on the sheet again. (usually overnight)

Grandma Rose said to figure one egg per person, but only process 3 eggs at a time in the food processor. Noodles can be kept in large aluminum pan covered with paper towel or light cotton towel in the pantry for months!
