"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

4 egg whites
2 teaspoons malt vinegar
1 teaspoon vanilla
1 cup sugar
2 teaspoons cornstarch

Directions:
Directions:
Prepare baking sheet with parchment paper. Wet upper side of parchment paper with water. Preheat oven to 325°.

Beat egg whites until light and fluffy. Add vinegar and vanilla. Slowly pour in sugar. When mixture forms peaks (10 to 15 minutes of beating with hand mixer), add cornstarch and beat for 1 minute. Beating time is much less using a stand mixer.

Pile and shape on tray. Do not flatten as mixture will spread during baking. Turn oven down to 290° and put Pavlova in oven for 1 hour. Turn oven off and leave in oven with door closed (several hours or overnight). Cover with whipped cream and fresh fruit. Decorate and enjoy.

Personal Notes:
New Zealand is famous for Pavlova as it was created here for the Russian ballet dancer Anna Pavlova when she stopped on her world tour in 1926.
