2 large Vidalia Onions
1/2 cup plus 2 tbsp. Big Green Onion Egg Vidalia Onion Sriracha BBQ Sauce
1 egg, beaten
1/3 cup panko breadcrumbs
1/4 tsp. kosher salt
1/4 tsp. garlic powder
1/4 tsp. Cajun seasoning
1/2 cup mayonnaise

1. Lay onion on its side. At the pointed end (not the root), slice about one-half inch off off the onion. Lay the onion cut-side-down, root side up. Place your knifepoint about 1/4-inch from the root and slice down. Rotate the onion and continue making slices every 1/4 to 1/2 inch. Turn the onion over and gently separate the petals.

2. In a deep bowl large enough to fit the onion, combine the BBQ sauce and beaten egg. Dip the onion into the sauce, root-side-up. Work it into the sauce, so that sauce gets onto every petal.

3. Place the onion into a mini cast iron skillet or something comparable.

4. In another bowl, combine the breadcrumbs, salt, garlic powder and Cajun seasoning. Sprinkle the breadcrumbs onto every petal. Repeat with the second onion.

5. Heat the grill to 400º. Place the skillets on the grill and cook for 35- 40 minutes.

6. Mix the mayonnaise with the 2 tbsp of BBQ sauce. Serve as a dipping sauce.
