2 medium carrots
2 stalks celery
1 small onion (or 2 T dried minced)
1 can tomato paste
4 garlic cloves
1 3/4 T Italian seasoning
1 t salt
1/4 t pepper
1 can diced or crushed tomatoes
2 cans beef or chicken broth
3 C water
16 frozen meatballs

Directions:
Directions:
1. Put carrots, celery, onion and garlic in Vitamix with broth and liquify.
(If no Vitamix, chop the veggies and saute in 1 t vegetable oil for 4-5 minutes)

2. In a large stockpot, combine veggies, tomato paste, tomatoes, water, salt, pepper and Italian seasoning. Bring to a simmer.

3. Cut meatballs in halves or quarters and add to soup. Simmer an additional 10 minutes.

4. Serve with grated Parmesan cheese and croutons.
