Toasted Nuts:
3 T. butter, melted
3/4 cup chopped pecans
1 T. sugar
salt 1/4 tsp??

Ice Cream:
1/2 cup packed brown sugar
1/4 cup sugar
2 T. cornstarch
2 eggs, beaten
1/3 cup maple flavored pancake syrup (add maple flavoring to syrup)
2 1/2 cups milk
1 1/2 cups whipping cream
2 tsp. vanilla

Directions:

Combine butter, pecans, salt, and 1 tablespoon sugar. Spread in single layer in cake pan. Roast at 225 - 250º for 15 minutes. Stir and roast 15 minutes longer. Cool. For ice cream, combine sugars, cornstarch, eggs, and syrup in the top of a double boiler. Gradually add milk. Cook over boiling water until mixture thickens. Chill mixture several hours. Stir in nuts, cream, vanilla, and two more cups milk. Freeze in gallon ice cream freezer.
