-2 large cod fillet fish, cut in 2 to 3- inch pieces
-3 cups grape tomatoes, washed, dried, some halved
-1 small red onion, thinly sliced
-7 garlic cloves, finely chopped
-1 tbsp capers
-2 tsp cumin, divided
-2 tsp dried oregano, divided
-⅓ cup fresh mint leaves, washed, dried, stems removed, chopped
-salt and pepper
-olive oil
-½ cup dry white wine
- ⅓ cup water
-2 lemons, juice of

Directions:
Directions:
-Pat fish dry, cut into pieces, season both sides with half of the dried oregano, cumin, salt and pepper.

-Heat about two tbsp of olive oil in a large ceramic or heavy nonstick pan over medium-high heat. Lower to medium heat and saute fish on both sides briefly until somewhat golden (about 4 minutes or so).

-Remove fish carefully from heat. Set aside.

-Add more oil to the pan, if needed, and saute onion for three minutes.

-Now, add garlic,tomatoes and capers and season with the remaining oregano, cumin, salt and pepper. Saute for about five-seven more minutes.

-Add lemon juice, and water. Remove from heat briefly to add white wine (I always prefer adding wine away from open flame). Return to medium-high heat and bring to a simmer.

-Add fish to the simmering liquid, turn down to medium heat, and let simmer until cod is firmer and perhaps begins to flake (another 10 minutes or so).

-Remove from heat and sprinkle with the fresh mint.

-Divide cod, tomatoes and herb wine broth among four bowls or plates.
