Focaccia/Pizza Dough Recipe

2 c. warm water
1 tsp. yeast
6-7 c. flour

Additional Ingredients for Focaccia:
olive oil
fresh rosemary
coarse salt

Directions:
Directions:
Add the yeast to the warm water, then mix in 6 c. flour in batches. This can be done in a mixer with the dough hook or hand knead. Dough should be soft but not sticky. Add the 7th cup of flour as necessary. Put dough in a bowl greased with olive oil and make sure olive oil covers all sides of the dough. Let rise, covered for at least 1 hour at room temperature or however long in the fridge if punched down a few times. Dough also needs to be punched down before rolling out on floured board.

Roll out into 3 pizzas or 2 focaccias.

For the focaccia:
Roll out on floured board, poke holes into the dough, brush with olive oil, spread with fresh rosemary and coarse salt. Bake at 400 degrees for 10 minutes til golden brown. Cut with a pizza cutter into strips.
