2 cups butter (1 pound or 452 grams melted but not browned)
2 cups brown sugar
2 cups white sugar
4 eggs beaten
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 cups all-purpose flour (500 grams)
1 teaspoon vanilla extract
2 1/2 cups chopped sweetened dried pineapple
½ cup chopped sweetened coconut flakes (can substitute nuts)
3 cups rolled oats (not instant)

Directions:

Heat oven to 350 º F.
Melt butter. Add sugar and mix. Let cool a bit.
Add beaten eggs, baking powder, baking soda, salt, and vanilla extract.
Mix well.
Mix in the flour.
Add fruit, oatmeal, and coconut and mix in.
The batter will be quite stiff.
Make into teaspoon-sized balls and put on greased cookie sheet. These cookies spread while baking so space them about 2 inches apart.
Bake for 12 to 15 minutes. What them carefully near the end of the baking time as they burn easily. Cool 2 minutes on the pan and remove to a cooling rack to cool completely.

Can substitute any dried fruit. This is a big batch of cookies but they freeze well either cooked or uncooked. I usually make half of the recipe which yields about 6 dozen cookies
