1 large red pepper
1 c corn kernels (fresh or frozen), cooked 3 minutes
1 garlic clove, chopped
1/2 c packed fresh cilantro, chopped
1 15 oz. can black beans, rinsed and drained
2 T (or more) balsamic vinegar
1/2 t salt
pepper to taste

Roast pepper and chop. Rinse corn in colander under cold water, drain. Mix all ingredients. Can be made ahead and stored in frig Eat with tortilla chips or as a relish with meal.
