Brine: I cup vinegar, 1 cup sugar, 1/4 teaspoon pickling salt
Bring to a boil and keep hot.
Add spices of your choice to sterilized jars (cinnamon stick, cloves, whole allspice, pickling spice mix). A pint jar will not need much spice for flavour, experiment until you find the combination and amount you like.

Pack jars with cooked beets cut to size, or baby beets. Fill with brine. Tap out air bubbles (I use a wooden skewer to poke the bubbles) Wipe rims clean, put on lids finger tight, and process in a hot water bath for 35 minutes.

Make brine as you need it.
