1 pound dried peas (green or yellow, whole or split)
8 cups water
A ham bone, or a smoked hock, or some bacon

1 large onion chopped
1/4 cup grated carrot
1/2 cup finely chopped celery

Directions:
Directions:
Rinse peas, put in large pot with water and bring to a boil. Remove from heat and let sit for an hour.
Add the ham bone, onion and celery.
Bring to a boil again, then reduce heat and simmer until peas are tender (about 1 1/2 -2 hours)
When cooked remove ham bone and add any ham from the bone back into the soup.
Season with salt and pepper. You can add some savory if you like, about a teaspoon dried added when you add the vegetables.
