3 T fat (olive oil and butter)
1 c diced onion
1 c diced celery
1 c white rice
3 c chicken stock
1/2 tsp salt

Directions:
Directions:
Heat oven to 350º F.
Saute onion and celery in fat until golden brown over medium heat. Add washed rice; cook and stir constantly until rice is browned. Add the chicken stock and stir. Pour into a greased baking dish, cover and bake for about 45 minutes until rice is cooked but not dry. Season to taste, and if you like a more pronounced chicken flavour, add some chicken bouillon to the chicken stock.
