1 Cup pumpkin
1 Cup Oil
1 Cup brown sugar
2 Cups flour (I used 1/4 cup whole wheat flour)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1 tsp pumpkin pie spice
2 eggs

Directions:
Directions:
Preheat oven to 350º Blend pumpkin, oil & sugar with mixer at med speed. Sift together all the dry ingredients including the spices. Add the eggs one at a time to the pumpkin mix. Gradually add the sifted ingredients. Spoon batter into 12 unit muffin pan.

You can add nuts, raisins or choc chips

Bake for 25-30 minutes
