Ingredients: Crust: 2 Cups graham crackers 2 Oz. unsalted melted butter 1 Tbls. sugar 2/3 Cup Macadamia nuts, ground Stir together and press into the bottom of springform pan.
Bake at 350 for 10 minutes, cool completely
Margarita Mousse: 6 eggs 6 egg yolks 2 Cups sugar 3 Tbls lime zest 1 1/2 cups key lime juice (Nellie and Joe"s) 6 Tbls tequila 9 Oz. Callebaut White Chocolate 2 1/4 Cups heavy cream 6 Gelatin sheets, hydrated
1 Cup to 1 1/2 cups whipping cream for topping

Directions:In a double boiler add eggs, egg yolks, sugar, lime zest, lime juice, and tequila. Cook whisking often until thickened about 10-12 minutes.
Add softened gelatin sheets and white chocolate; stir to melt. Refrigerate for 1 hour.
In mixer whip the heavy cream, fold into lime custard in 2 additions.
Pour mousse into prepared pan, and let chill again in freezer until firm or semi frozen.
Whip remaining cream and with a pastry bag and a 1M tip pipe the cream onto the edge of the torte. Sprinkle a little lime zest on the cream. |

Notes: This is probably a little labor intensive but so worth it! The flavor is outstanding, it's fresh, tart, creamy....everything you want in a summer dessert. Don't let all the steps stop you, the reward is amazing!
