Marinade:
¼ cup pure maple syrup
3 tbsp. grainy Dijon mustard
2 tbsp. fresh dill minced
2 tbsp. fresh lemon juice
1 tbsp. olive oil
1 tbsp. balsamic vinegar
2 tsp. lemon zest
1 tsp. garlic minced
¼ tsp. each salt and pepper

4 large boneless skinless chicken breasts (1 1/2 lb)

Directions:
Directions:
Whisk together all of the marinade ingredients.
Arrange chicken in a glass baking dish in a single layer.
Pour marinade over the chicken and turn to cover both sides of the chicken.
Cover with plastic wrap and refrigerate for at least 1 hour or up to 1 day.
Preheat oven to 350 º F. Remove plastic (go figure) and bake uncovered for 35 min.

Can substitute boneless skinless chicken thighs. Be sure that the baking pan you use is completely covered with the chicken. If you use too large a pan the marinate will dry out and burn before the chicken is cooked.
