Stuffed Peppers Recipe

1 yellow, 1 orange and 1 red pepper
2 lbs. ground turkey
1 onion, chopped
1 can chick peas
1/2 c. chicken broth
Salt as desired
1/4-1/2 tsp. smoked paprika
sm. amt. olive oil for browning
2 squirts of tomato paste from a tube
shredded cheddar cheese for on top of peppers

Preheat oven to 350º.

Wash, dry and d-seed peppers, cut in half, rub a little olive oil and salt on to pepper halves. Place peppers on a baking sheet with puffy side up. Bake for about 20 mins. or till tender.

Meanwhile, sauté chopped onion for 5 mins. (with 1/8 tsp. salt) add turkey, (with 1/8 tsp. salt) and brown till no more pink shows. Add d-shelled chick peas, broth, tomato paste, and smoked paprika. Cook for 5 mins. to get all ingredients meld together. Finally, fill each pepper half with the meat mixture and top with the shredded cheese. Bake till the cheese is melted and meat is heated through.
