Pastry for 9 inch pie
1 1/2 c. shredded Swiss cheese
1 tbsp. all-purpose flour
1/2 diced mushrooms
4 eggs beaten
2 c. half and half
1/2 tsp. dry mustard
1/4 tsp. salt
1 small onion
2 tbsp. vegetable oil

Directions:
Line a 9 inch pie plate with pastry. Trim excess pastry around edges; fold edges under, and flute. Prick bottom and sides of pastry with a fork. Bake a 400 degree for 3 minutes; remove from oven and gently prick with a fork. Bake an additional 5 min. Combine cheese and flour; sprinkle evenly into pastry shell. Top with mushrooms combine eggs, half and half, dry mustard, and salt, stirring well. Pour mixture into pastry shell. Bake 325 degrees for 65-70 minutes. Let stand 10 minutes. (Sauté 1/2 lb. sliced mushrooms and 1 small onion, chopped, in 2 tbsp. veg. oil; drained)
