3 lbs. chicken
flour
1/4 c. olive oil
1 c. diced onion
1 crushed garlic clove
1/2 lb fresh mushrooms sliced
1 1/2 c. Holland House Wine
1/2 c. pitter olives
1/3 c. capers
1 lb. plum tomatoes drained
1 tsp. lemon juice
1/8 tsp. pepper, basil, oregano, ground sage

Directions:
Directions:
Coat chicken. Cut up into 8 pieces with flour. Brown in olive oil. Remove chicken, sauté onions and garlic until golden. Add mushrooms and cook for 2 minutes. Add Holland House Wine. Cook 10 minutes. Return Chicken to pan. Add pitted olives, capers, tomatoes, lemon juice, pepper, basil, oregano, and ground sage. Cover and simmer 30 minutes.
