2 (15-ounce) containers, chicken stock/broth- adjust to preference
2 (6-ounce) cans of tomato paste
1 (28-ounce) of canned tomatoes
1 cup heavy cream plus addition to taste, optional-substitute fat free evaporated milk
4 ripe plum tomatoes cut in half lengthwise and seeded
2 cups chopped yellow onions (2 onions)
6 garlic cloves, minced
2 tablespoons sugar
1 to 2 tablespoons olive oil
2 tablespoons unsalted butter
Coarse salt and black pepper
20 plus leaves fresh basil, chopped

Directions:
In a stockpot over medium heat, sauté the onions and garlic with olive oil and butter for about 5 minutes, until the onions turn clear. Then add the 4 ripe tomatoes and cook another 5 minutes. Next, add the canned tomatoes, tomato paste, basil, and chicken stock. When soup bubbles, stir in heavy cream and reduce heat to low. Season with a little salt and pepper and simmer gently 15 minutes, stirring occasionally. With an immersion blender, puree soup. Serve bowls of soup with basil and floating croutons as soup toppers.
