1 turkey carcass
16 c cold water
2 celery ribs, sliced
2 large carrots, sliced
2 onions, quartered
10 sprigs of Italian parsley (flat leaf)
1 T black peppercorns
2 T rosemary

Directions:
Directions:
Strip as much meat off the turkey bone as you can and toss them into a large pot. Add the water and other ingredients and bring to a boil. Reduce heat to a simmer, and boil continuously for 4-5 hours until the broth is reduced to approx 8 cups. This will give you the best flavor. Pick out the largest bones first, and any veggies. Strain the stock through a fine mesh or cheese cloth. Skim off any excess fat and refrigerate remaining stock. You can freeze these as well if you don't plan to use it right away.

Eric, Lisa, and Cheryl always teased Dad about this "soup" recipe that he made in Beloit, WI with the turkey bones after Thanksgiving. It's really a recipe to make turkey stock. When Dad made it, every day he kept added soup ingredients to "keep the pot going".
