4 thick boneless pork loin chops (about 1.5 lb total)
2 tbsp chopped fresh tarragon leaves
1/2 tsp salt
2 tbsp olive oil
1 lb asparagus, sliced on an angle
1 bunch green onions, sliced
1/2 c dry white wine
1 tbsp Dijon mustard

Directions:

1. Rub chops on both sides with chopped tarragon leaves and 1/2 tsp salt.
2. In 12" skillet, heat 2 tbs olive oil on med high until hot. Cook pork 5 min until browned on
both sides, turning over once. Transfer to plate.
3. To same skillet, add asparagus and green onions. Cook 3 min, stirring,
4. Add 1/2 c wine and simmer 2 min
5. Stir in Dijon mustard.
6. Nestle pork into asparagus. Cook another 2-4" or until pork is cooked through.
