1 Package 6-8 inch soft tortillas

2 Cups red cabbage very thinly sliced
1/2 Cup lime juice (key lime is the best)
1 Jalapeño seeded and diced really small
1/2 bunch fresh cilantro
1 Fresh mango, diced

1 Pound small to medium shrimp

Salt and pepper to taste

In a non reactive bowl, place red cabbage and lime juice, toss thoroughly to coat cabbage and set aside.

De-stem, seed and chopped jalapeño .
Chop cilantro
Peel, seed and dice fresh mango.

In a sauté pan add a small amount of butter or oil and cook the shrimp, cool slightly.
Season

Heat your tortillas anyway you like, I use a grill pan because I love the grill marks but you don't have to.
To Assemble:
Drain the lime juice off the cabbage (I pour a little on the shrimp) to the cabbage add, jalapeño, cilantro and mango. Toss very gently so you do not crush the mango.
Place about 1/3 Cup cabbage mixture in your tortilla.
Place shrimp on top.

This is so light and the colors are beautiful! I prepped everything ahead but you could still make this so quickly, it makes such a great summer meal.
