8 Ounces Pad Thai Noodles
2 Eggs
1 Batch of Pad Thai Sauce (recipe found in this cookbook)
3 Cooked Chicken Breasts, Shredded
1 Cup Bean Sprouts
1 Cup Cilantro
3 Green Onions, Sliced
1/2 Cup Chopped Peanuts

Directions:
Directions:
Prepare noodles according to package directions.

Scramble eggs for about 2 minutes and set aside.

In a large skillet, combine noodles. chicken, eggs and sauce.

Top with bean sprouts, cilantro, green onions, and peanuts.

Cook over medium heat until heated through.

I know Pad Thai is supposed to have peanuts in it, but I like to fix this without the peanuts and it is still really good.
