1 Cup Self Rising Flour
2/3 Cup Sugar
4 Tbls. Unsalted Butter, softened
1/3 Cup Pink Lemonade concentrate, thawed
1/4 Cup Buttermilk
1 Large Egg
1/2 tsp. Vanilla
From a jar Wilton Red Food Coloring dip a toothpick and add to batter for a light pink batter.
If you need more get another toothpick, never reuse the same toothpick. (Very old rule of thumb in cake baking and frosting)

Pink Lemonade Butter Cream Frosting:
2 Cups Powdered Sugar
5 Tbls. Unsalted Butter
3 Tbls. Pink Lemonade Concentrate
1 Tbls. Heavy whipping cream
Once again dip a toothpick in a jar of Wilton red food coloring for a pink butter cream.

Mix butter, sugar and flour in mixer, add the rest of the ingredients and mix until just combined, pour in paper lined or greased muffin pan, 2/3 full.
Bake at 350 for 20-25 minutes.

This recipe does not call for salt, I almost always add a little when baking, it will always enhance cakes, bread and muffins.
These are good cupcakes, they have just a hint of a tangy flavor from the lemonade.
