8 Egg Yolks
1/4 C. Lemon Juice
1 tsp Salt
1/4 tsp Cayenne Pepper
3/4 C. Clarified Butter

Directions:
Directions:
Place the large egg yolks and lemon juice in a mixing bowl. Place the bowl over or near the pilot on top of the stove. Beat briefly with a whisk, then slowly pour in the hot melted butter, beating briskly and constantly while you pour. When the sauce begins to thicken, sprinkle in the salt and pepper. Continue to beat while adding the remainder of the butter. Beat until the sauce reaches an attractive thick consistency. When the sauce is finished, leave the bowl over the pilot to keep warm, or place in basin of warm watar.

This recipe yields approximately two cups of sauce.
