Ingredients: 1/2 Cup Butter 1 Large Egg 2 Medium Apples, peeled and chopped 1 1/2 Cups Frozen Mango pieces, thawed 1 Cup Raisins 1 Cup Unsweetened Apple Sauce 3 Cups All-Purpose Flour 1 Cup Brown Sugar, packed 1 Tsp Baking Soda 1/2 Tsp Salt

Directions:Place the oven rack in the centre position. Turn the oven on to 375ºF (190ºC). Grease the muffin cups with cooking spray or place paper muffin cups in the muffin pan. Set aside. Melt butter in a saucepan on medium, Set aside. Break the egg into one of the large bowls. Beat with a fork until the egg is bubbly on top. Add the apples, mango pieces, raisins and applesauce. Stir until well mixed. Add the butter and mix well. In a separate bowl, combine the remaining ingredients and stir well. Dig a hole in the centre of the flour mixture with a mixing spoon. Put the fruit mixture into the hole. Stir just until the flour mixture is moistened. Do NOT overmix! Spoon the batter into the muffin cups. The cups with be full and e batter mounded. Bake for 30 - 35 minutes or until a toothpick can be inserted into the centre of a muffin and come out clean. Turn the oven off. Remove the pan and place on a wire rack to cool for 5 minutes. Remove the muffins from the muffin try and continue to cool until ready to eat. |
