3 - 4 cups shredded cabbage
1 lb. ground beef
1 medium sweet onion chopped
1/4 cup long grained white rice uncooked
salt & pepper

Sauce:
1 can tomato soup
1 can water
1 tbsp. brown sugar
1 tbsp. lemon juice
A good sprinkle of chili powder (optional)

Directions:

Grease casserole and put shredded cabbage in bottom.
Brown ground beef with finely chopped onion.
Mix in rice and salt & pepper. You can also add a little garlic or seasoning salt instead of the first salt.
Spread on top of cabbage.
Mix sauce together and pour evenly over top.
Cover casserole and bake at 300 º F for 1 1/2 - 2 hours until cabbage is tender and the rice is cooked. If too juicy remove the lid for the last of baking time.

Leftovers can be easily warmed in microwave or non stick frying pan.
If you use brown rice to increase fiber it may take longer to cook and need a little extra liquid. Can substitute tomato sauce or marinara sauce for the tomato soup.
