1/3 c Chipolte Ranch Dressing
2 1/2 pounds skinless, boneless chicken breasts, cut into 1 inch pieces
24 (1 inch) pieces red onion
12 slices thick-cut bacon (1 pound)
1 1/2 t. salt
1/2 t. pepper

Directions:
Toss and evenly coat chicken pieces with Chipolte Ranch dressing. Chill covered at least 1 hour - up to 3 hours.

Preheat outdoor grill to medium heat (325-375 degrees). Thread 1 onion piece onto a skewer, then thread on 1 end of bacon strip, letting strip hang down. Add a chicken piece, then thread hanging bacon over chicken and skewer it. Turn skewer so long end of bacon again hangs down. Repeat until entire strip of bacon is threated using 4 to 6 chicken pieces. Skewer onion piece at end.

Lightly oil grill grate. grill skewers turning every 3 to 4 minutes until browned on all sides and chicken is no longer pink in the cneter.

Serve with extra ranch dressing as dipping sauce, if desired.
