2 T. Sesame oil
1 T. Canola oil
1 cup chopped carrots
1 cup coarsely chopped broccoli
1 cup diced rotisserie chicken
1 cup frozen green peas
2/3 cup chopped green onions (4 green onions) -- Divided
2 garlic cloves, minced
1 t. grated ginger
3 cups cooked brown rice, chilled
2 large eggs, lightly beaten
2 T. Soy sauce
1/2 t. kosher salt
1/4 t. black pepper

Directions:
Directions:
Heat skillet over med high heat. Add oils, swirl to coat pan.

Add carrots and broccoli. Stir fry for 3 minutes or until crisp tender. Add chicken peas, 1/2 cup green onions, minced garlic and ginger. Stir fry 2 additional minutes or until thoroughly heated.

Add rice, cook 3 minutes or until thoroughly heated. Reduce heat to medium. Push rice to side, add eggs to opposite side. Cook eggs without stirring for 10 seconds, then stir and cook for 2 minutes while eggs scramble. Mix into rice mixture and serve.
